They say some of the best ideas are thought of when the mind is relaxed.
The COLT concept was created and scribbled on a napkin that the owner took from her glove compartment on a long drive home from the South.
With southern hospitality in mind, and her families love of good barbecue, she set out to design a pleasant atmosphere where guests could get an inexpensive, delicious meal made from scratch the authentic way using steel smokers and actual hard wood, but yet, not in the usual garage-style atmosphere common to most barbecue restaurants.
She wanted a place where anyone — from the budget conscious student to the affluent retiree- would feel comfortable, relaxed.
Her team built the restaurant, created the recipes, hired a friendly, hardworking staff and launched the first COLT Grill BBQ & Spirits in Northern Arizona in 2016. The affordable “walk-up” grill in Old Town, Cottonwood was a hit, and the enterprise continues to resonate with both locals and tourists alike.
The extensive menu centers around smoked meats — slow smoked the authentic way over (literally) tons of oak hard wood fed into gigantic steel smokers out in front of each location. While the pit-masters butcher, handrub and slow smoke the meats, the kitchen crew hand grinds fresh prime beef for their multi award-winning hamburgers and savory turkey sausage, as well as work with fresh produce for crisp salads and bountiful tacos.
The highest quality ingredients are chopped, sliced, diced and mixed into flavorful desserts, sauces and sides to pair with, and slather on, tender baby back ribs, juicy beef brisket, smoked chicken, turkey and flavorful pulled pork.
At each bar you’ll find friendly bar tenders creating fantastic cocktails and pouring delicious brews to highlight the hand-made menu.

The Old Town, Cottonwood location serves up a hearty country breakfast with unique twists, such as the eggs Benedict with smoked brisket, mushrooms and spinach over cheesy jalapeno cornbread, topped with the remarkable Santa Fe sauce.
